Goat Rock Funk is created with a spontaneous ferment starter from Goat Rock Beach on the Sonoma Coast. This process allows the natural yeasts in that area to provide a unique flavor drived from this particular "terroir". We have a series of four terroir diven beers that will be released over the first 4 VIP club shipments. This starter is added to the wort in a single neutral reused wine barrel and then fermented. The natural yeasts and unique barrel creates an enjoyable wild ale that has lemon-lime tartness, citrus and pineapple notes, with a fruity and estery nose. A briny, gose-like, pale yellow ale with a woody tannic backbone and a slight dairy finish create a unique flavor experience.

Production Notes
Our terroir driven series includes beers that have spontaneous starters from Alexander Valley, Russian River, Stumptown Brewery (just outside Guerneville) and of course this one, which is from the Goat Rock Beach on the Sonoma County Coast. We crafted a single barrel of each so they are extremely small production with only 168 bottles produced of Goat Rock Funk. These are not kettle soured but express the traditional gose/briny flavor that is associated with this technique is present in our Goat Rock Funk - could these be derived from the ocean and salt air influence from the wild yeast?
Food Pairing Notes
Although perfect to enjoy by itself, if you were to pair the Goat Rock Funk with a meal we recommend something creamy as the beautiful citrus fruit will cut through the fat although the dairy finish will complement a dry aged goat cheese or a creamy chicken dish.
Aging Your Wild Beer
Our Wild Beers are bottled when our Brewers believe they are ready to drink. If you would like to live "on the wild side" and age your bottles please do so at your own risk! Secondary fermentation and aging in bottle can produce flavors and bottle pressures that we cannot anticipate! Please store at 40 Degrees.
